When it is cold and windy outside I always want soup or stew to comfort me. I remembered a great family recipe that I converted meat-free that's easy and makes a TON!
Cabbage Patch Stew
Saute together 1/2 chopped onion & 2 gloves minced garlic in olive oil. Once onions are translucent, add 3 chopped carrots and 3 chopped celery stalks. Saute for about 5 minutes.
Add the remaining ingredients: 1 can stewed tomatoes (chopped), 1 head of chopped cabbage, 1 can kidney beans, 2 cups of either: TVP, soy crumbles, ground turkey/beef (or omit altogether), and 2 cups of vegetable broth
Cover and simmer for about 1-1/2 hours (add water if needed). Add salt and pepper to your taste.
I love eating this with toast.
